Amber Ale Carrot Cake with Spiked Cream Cheese Frosting

Hey friends! I am so giddy, honored and humbled to announce that Urban Outfitters contacted me to bake, style and photograph this Amber Ale Carrot Cake with Spiked Cream Cheese Frosting from one of their cookbooks for sale, The Craft Beer Cookbook. I’d be damned if I didn’t admit it was the best darn carrot cake I’ve ever had in my entire life.  You all probably know by now I love baking with beer, so I was super jazzed when they invited me to do a guest post for this recipe. The author of the cookbook, Jacquelyn Dodd, is actually one of my hero bloggers, and I’ve adapted recipes from her before. Such a wonderful and strange coincidence.

Admittedly, I have never been a huge carrot cake person, but this converted me. There’s something about the amber ale that provides such a delicate, moist texture that compliments the shredded carrots, raisins and pecans incredibly well. I was more than pleasantly surprised.       Thanks Katrina! The frosting is BOMB. I cheated a little bit and didn’t make the marscapone filling. I set aside more cream cheese frosting and added the orange zest to that, and it was just as amazing, I think. It’s literally the best carrot cake ever!
