Chocolate Cake with Mint Chip Buttercream Frosting


Spring time, to me, is when it’s time to start perusing the ice cream isle once again. You have a legitimate excuse when the temperature rises and begins to tease you with the Summer sun. How unfair to make you crave a cooling treat, to have a reason to have some ice cream on hand in the freezer at all times. It’s a shame, I know. Well I don’t know about you, but when I’m craving a classic childhood ice cream flavor, I can never go wrong with mint chip. The kind with green food coloring. I hate being tricked into buying the fancy organic kind that is white mint with dark chips. That just doesn’t cut it. It doesn’t taste the same at all.  I have fond memories of those Baskin Robbin ice cream cakes from grade school birthday parties–nothing quite hit the spot and satisfied an entire group like mint chip ice cream cake. And from what I know about the general population, most people cannot refuse mint chip. IT RULES.
